Application:
Use Angel Type Egg Whites in angel food cakes, layer cakes, meringues, icings, marshmallow toppings, fine candies, or anytime the formula calls for fast whipping and full volume egg whites. Standard Egg Whites are used where less volume is required.

Description:
Angel - less than 0.1% sodium lauryl sulfate added as a whipping agent. Standard - no whipping aid added.

Conversion:
In most formulas - 1 part egg whites and 7 parts water by weight.

Storage:
Cool, dry storage recommended.

Packaging:
Angel Whites available in 50 lb. poly-lined cartons. Standard Whites available in 55 lb. poly-lined cartons.
